Ingredients
- 4 medium zucchinis (about 6 ounces each), halved lengthwise
- 1 Tbsp butter that is not salted
- 1/4 cup chopped mushrooms
- 8 oz 80/20 ground sirloin
- 14 cup of blue cheese (about 1 ounce)
- 1/4 cup chopped fresh cilantro
- 1 1 tsp dry ground oregano
- 1 tsp ground cumin
- 1/8 tsp cayenne pepper
- 1 tsp kosher salt
- 2 slices of bacon thick-cut
For the Spicy Ranch: - 1/4 cup ranch dressing
- 2 tsp Sriracha sauce
- 12 cup cherry tomatoes for garnish (optional).
Directions
- Preheat the oven at about 400°F. place a cooling rack on an oven sheet.
- Take the cores of the zucchinis to form boats. Set them aside. Place the boats into a colander, sprinkle with salt and let rest for 5 to 10 minutes to drain the excess water. Rinse and dry.
- Cut the zucchinis hollowed out with the cut sides facing down on the rack inside the pan, and bake for 10 minutes.
- As the zucchinis bake and the filling is being prepared: Chop the cores in a rough manner and then place them in an mixing bowl.
- Pre heat a sauté pan to medium-high temperature. Add the butter, and allow to warm for 1 to 2 mins before adding the chopped zucchini cores as well as mushrooms. Cook for 2 to 3 mins. Remove the pan from the heat source and put in a medium-sized mixing bowl.
- In the bowl that has the zucchini cores chopped In the bowl, add the ground sirloin, blue cheese oregano, cilantro in addition to cumin, cayenne pepper, salt. With your hands, mix the ingredients well before placing the filling in the fridge until you need it.
- Remove the zucchini boats stuffed with zucchini off the baking sheet. Then fill the boats with the sirloin and return to the oven for 15 to 18 minutes.
- As the stuffed zucchini boats are baking prepare the bacon using a sauté pan at medium-high heat until it is crisp before cutting into pieces. Mix the ranch with Sriracha until it is smooth.
- Once the zucchini boats stuffed with a mixture of spices are cooked, take these from oven. Then sprinkle the bacon on top and serve them immediately with the hot ranch sauce.
