Zero Point Weight Watchers Chicken Chili is packed with chicken breast, beans, corn and uses store-bought green salsa to make a super delicious and spicy broth. Make it in your slow cooker, Instant Pot, or stovetop.

This Weight Watchers White Chicken Chili is going to be a household favorite – whether you’re on Weight Watchers or not. It has big chunks of chicken, lots of vegetables and is just a touch creamy. This is now my favorite winter soup!

I also have Zero Point Weight Watchers Chili which is more like “regular” chili (ie tomato sauce based) but I really love white chicken chili and it hits the spot. Plus – it’s spicy and the perfect choice for a winter night that the whole family will enjoy!

Why is chicken breast 0 points on Weight Watchers?

Poultry is included as a zero-point food group because it is an excellent source of lean protein and is rich in nutrients, providing important vitamins and minerals. Protein can help you feel fuller for longer and plays an important role in bone and muscle health.

INGREDIENTS

  • 2 lbs chicken breast
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • 14 oz. canned pinto beans, drained and rinsed
  • 14 oz. canned white beans, drained and rinsed
  • 14 oz. canned corn, drained and rinsed
  • 16 oz green salsa
  • 4 cups fat free chicken broth

INSTRUCTIONS

  1. Slow Cooker: Add everything to the slow cooker and stir. Cook on low for 4 hours or until chicken is cooked through. Remove the chicken and either shred or chop. Return to the soup and serve with all your favorite chili toppings.
  2. Instant Pot: Add everything to the Instant Pot. If you reach the max fill line, you can add more broth after it finishes cooking. Set to manual for 8 minutes. Let the Instant Pot naturally release. Remove the chicken and shred or chop. Add back to the chili and serve.
  3. Stovetop: Add everything to a large soup pot or Dutch oven. Bring to a simmer and let cook for 25-30 minutes. Once the chicken is cooked through, remove and shred or chop. Add back to the chili and serve.

How to make a thicker chili?

There are two ways to thicken this thin white bean chicken chili – don’t drain the beans first – the liquid is thick – so it helps with the chili. You can also mix 1 tablespoon of water and 1 tablespoon of cornstarch in a bowl to make a slurry – then add it to your chili when it starts to boil.

I don’t think you’ll need to do this – but it’s an option!

Can you make this delicious chili in the crock pot?

Yes of course! The slow cooker recipe would just differ slightly:

  • saute garlic, celery & onion
  • add everything (minus yogurt & cilantro) to slow cooker and cook on low for 4-6 hours
  • add yogurt when ready to serve
