Keto Stuffed Cabbage

This recipe for stuffed cabbage is similar to grandma’s recipe but with one major difference- it’s keto and low carb friendly! Instead of rice in this dish, it makes use of cauliflower rice, which is fried with onions and garlic. Combine that with meats that are savory tomatoes, a variety of meats as well as Italian seasonings and you’ll not only get a great keto meal prep, but it is also a high-nutrient dish!

Ingredients

  • 1 head of cabbage
  • 2 tbsp olive oil
  • Half tiny yellow onion chopped
  • 4 cloves of garlic, chopped
  • 1 1 lb Ground beef 80/20
  • 50 oz tomatoes, diced
  • 1 egg
  • 15 oz tomato sauce
  • 2 tsp Italian seasoning
  • 1 tsp parsley
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cauliflower rice

Directions

  1. Pre-heat the oven at 350° F.
  2. Cook a large pot of salted water.
  3. Get rid of the cabbage leaves and keep them as intact as is possible.
  4. Place the cabbage in boiling water, and boil for 3-4 mins.
  5. Take the cabbage out of the oven and place it aside.
  6. In a large pan cook the oil on moderate temperature.
  7. Add the garlic and onion. Then cook for 5-8 minutes or until the onion is golden caramelized and aromatic.
  8. Incorporate the rice from cauliflower. Cook for another 5 minutes.
  9. Remove sauce from the heat and allow to cool while making your cabbage roll.
  10. Remove half of the liquid out of the diced tomatoes. Mix ground beef eggs, seasonings, eggs and the partially drained diced tomatoes.
  11. Incorporate the slightly cooled cauliflower rice and mix well.
  12. Pour half the sauce into the bottom of the baking dish.
  13. Place a spoonful of the mixture to the bottom of the leaf (the firmest portion) and then begin rolling upwards.
  14. After the cabbage has been stuffed and wrapped, place the roll in the tomato sauce. Repeat until all the meat mixtures are used up.
  15. Finish with tomato sauce.
  16. Bake in the oven, then bake for about an hour.
  17. Serve your keto-stuffed cabbage and then enjoy!
