This low-carbohydrate vegetable, chicken and palmini noodle soup is great for the colder temperatures. If you’re looking for recipes for the turkey leftover from Thanksgiving it can be used as well, if you substitute it for chicken. The soup can be prepared in advance and then put in the fridge for up to a week.

Ingredients

  • 1 1 lb chicken breasts that has been cooked and then chopped
  • 2 tbsp butter
  • 2 cups carrots, sliced
  • 2 cups celery and chopped
  • 2 QTS chicken broth
  • 2 cups water
  • 1 tsp minced garlic
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • 1 1 tsp dried thyme
  • 1 tsp dried garlic
  • 1 bay leaf
  • 1 1/3 tbsp chicken bouillon
  • 1 1/2 lbs palmini noodles

 

Directions

  1. Place the chicken breasts that have not been cooked in a pot and add water. Let it simmer until the chicken is cooked approximately 18 minutes. Cut into pieces and place aside.
  2. In a large saucepan, put the butter in and melt. Add the celery and carrots to cook 5 mins.
  3. Add the broth with the spices, water, and bouillon. Bring to an unbeatable boil.
  4. Add the chicken and the palmini noodles. Bring back to a simmer and cook for 8 to 10 minutes. Serve hot and take pleasure in it!
