Scone Ingredients
- 1/2 cup almond milk
- 1/2 2 tbsp of lemon juice with zest
- 2 cups keto flour
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup solid coconut oil
- 2 Tbsp Monk Fruit Sweetener (or any other keto sweetener)
- 1 tsp vanilla
- 1/2 cup blueberries
Glaze Ingredients
- 12 cups powdered with erythritol
- 1 tbsp almond milk
Scone Directions
- Preheat oven to 375°F. Make a baking sheet using slip baking mats and parchment.
- Within a bowl make a mixture of Almond milk with lemon juice. It should rest for five minutes.
- In an enormous bowl, combine the keto flour baking powder, baking soda and salt into a mixing bowl. And by using a fork mix item together.
- Incorporate the coconut oil into the keto flour mix, and mix it by hand until small crumbles begin to form. Fold the blueberries gently in.
- Create a well in the middle in the mixture of keto flour. Include the mixture of almond milk and monk fruits, and vanilla. Mix until it is just blended; do not overmix.
- Divide dough into 6 balls. Place each dough ball on the baking sheet and then smooth out by hand, gently. Bake for 22 to 28 hours or till a toothpick placed into the middle is clean.
- Take the oven out and allow to cool for 10 mins on the baking pan. Transfer to the cooling rack to allow to cool completely.
Glaze Directions
- While the scones are cooling as they cool, mix the powdered, almond milk and erythritol until it is smooth. Spread or drizzle on the scones that have cooled.
