Bananas aren’t usually thought of as keto-friendly. Actually, a large banana contains approximately 30 grams of carbohydrates. However, as like everything else there is a need to be careful. Although this recipe uses real bananas however, it only uses one banana to make an entire bread loaf! Banana offers a wealth of flavour and moisture in just one fruit, and it is a great ingredient to mix with keto-friendly ingredients while offering a delicious taste. This recipe mixes the sweetness of a very ripe (almost soft) banana, with the nutritious fats in eggs, butter as well as walnuts, almonds, and walnut flour!
Ingredients
- 1 1/2 cups almond flour
- 3 tbsp granular erythritol
- 3 3 tbsp “brown sugar” erythritol
- 1/2 tbsp unflavoured gelatine (about 1 packet)
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 large ripe banana
- 3 eggs
- 2 tbsp butter, melted
- 1 tsp vanilla extract
- 1/4 cup walnuts, chopped
Directions
- The oven should be preheated up to 350 degrees F.
- Grease the loaf pan.
- Mix all wet ingredients together in a large bowl and mix until well-combined.
- Mix every dry ingredient (except walnuts) in separate bowls and mix well until they are all mixed.
- Stir the wet ingredient mix into the dry ingredients mixture and let it be at room temperature for 5-10 minutes so that the liquid has time to better absorb into the almond flour.
- Incorporate the walnuts in keto banana bread mix.
- Put keto banana bread mix into the loaf pan greased.
- Put it in the oven, and bake for 35 to 40 minutes or until cooked.,
- The keto banana bread needs to cool before cutting into pieces.
