Broccoli Reba Salad With Chicken & Kale

Its chicken with broccoli rave (rapine) and kale salad makes an excellent lunch choice for meal preparation because it’s high in protein and micro nutrients! Unlike monotonous salads from the past, this one microwaves the kale and rapine to remove some of the bitterness from the green leafy veggies.Once the garlic, onion, and ginger are added, your chicken salad will taste amazing!

Ingredients:

   1 lb ground chicken

  • 1/2 onion, diced
  • 1 tbsp ginger (peeled, grated)
  • 3 garlic cloves
  • 1/2 tsp salt
  • 1 bunch rapini (broccoli rabe)
  • 4 cups kale leaves (stems removed, chopped)

Directions

  1. Large skillets are heated up on medium-high heat.
  2. In the bowl, add the chicken that you ground onions and garlic, as well as ginger as well as half the salt. Then cook for 10 minutes or until the chicken is cooked.
  3. Include your “rapini” (broccoli rabe) along with the kale, and the remaining salt.
  4. Cook for five more minutes, or till the spinach are tender and the stalks soft.
