Ingredients
For the Bread
- 12 Cup blanched almond flour
- 1/2 cup high-fibber coconut flour
- 1/4 cup hazelnut flour
- 1/4 cup Quest protein powder multi-purpose mix
- 1 tbsp psyllium husk powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp xanthan gum, divided
- 4 eggs
- Half Cup (1 stick) unsalted butter softened
- 3 Tbsp coconut oil and MCT oil
- 2 2 tbsp large amount of heavy cream
- 2 tsp vanilla extract
- 1 tsp Splenda brown sugar blend
- 1/4 cup of erythritol depending or sweet preference
- 1/4 cup black walnuts, chopped
- 1 zucchini (about 7 ounces), shredded
For the Maple Butter
- Half Cup (1 stick) unsalted butter Softened
- 1 tsp maple extract
- 1 tsp ground cinnamon
- 1/4 tsp kosher salt
- 2 tbsp erythritol
Directions
- Preheat the oven until 325 degrees F and spray a 9 by 5-inch loaf pan in cooking spray and oil.
- In a bowl, combine coconut flour, almond flour, hazelnut flour protein powder, xylem husk powder, baking soda cooking powder, 1/4 teaspoon xanthan gum with spices. Set aside
- Divide the egg into two large bowls. Add the coconut and butter oil in the bowl together with the yolks. With an electric whisk to mix the ingredients until they are smooth and dispersed (with little or no dissociation). Incorporate the heavy cream with vanilla extract Splenda baking powder and sucralose, and mix until well-combined and set aside.
- Whisk the egg whites together until the egg whites are fluffy. Incorporate the remainder of 1/4 teaspoon xanthan gum and beat until stiff peaks form. approximately 3 minutes.
- Mix the egg yolks and egg whites until it is combined Then include the dry ingredient, nuts and zucchini shreds, and mix until a smooth batter is formed.
- Transfer the batter into the pan that you have prepared, cover with aluminums foil and Bake for an hour, turning the pan once halfway through.
- While the bread bakes Make the maple butter. Mix together the maple extract, butter as well as cinnamon, salt and sucralose until it can be spreadable and smooth.
- Take the bread out of the oven and transfer it onto an air-cooling rack. Once the bread has cooled cut it into six equal portions. Serve warm or cool, with about 1 or 2 teaspoons of maple butter.
