Pie Crust Ingredients
Avocado oil or butter can be used to grease
1 1/2 cups almond flour blanched
1/2 cup coconut flour
1/2 tsp xanthan gum
1/2 tsp Redmond Real salt
4 tbsp melted butter
2 large eggs
Pie Filling Ingredients
1/2 cup melted butter
1/2 cup erythritol/allulose blend
2 tbsp lemon juice
2 tsp cinnamon
2 tsp allspice
1 tbsp unflavoured gelatine
2 medium red apples cut into slices
1 tsp vanilla extract
xanthan gum to thicken (optional)
Crumb Topping Ingredients
1 cup almond flour
1 cup butter that has been melted or coconut oil
1/4 cup erythritol
1/4 cup Swerve brown sugar alternative
Pie Crumb Directions
1.The oven should be preheated to 350°F.
2.Spray a pie pan 8 inches in diameter with avocado oil or grease the pan with butter.
3.In a medium-sized bowl, mix all the ingredients. Add the butter that has been melted and eggs and mix thoroughly.
4.With your hands, roll your dough in a round. Place it on parchment paper and then roll it out using an edging pin (for optimal results, let it sit in the fridge for about 1-2 hours prior to rolling).
5.Fill the pie pans with the dough that you have rolled. Be sure the dough is level and that the sides are well-pressed. With a fork, make holes in the centre of the dough prior to baking.
6.For 10 mins, bake until the crust is firm but not entirely done. Remove the baking sheet from the oven and place in a dish to cool.
Pie Filling Instructions
1.In a large pan on medium-low heat, mix the butter that has been melted as well as the sweetener, lemon juice and cinnamon, as well as allspice and gelatine.
2.Mix in the apples slices as well as vanilla extract and stir. Bring to a boil and cook until the apples are soft, about 12 minutes.
3.Once the apples are softened, take them off the stove and allow them to rest for the filling to become thicker. For a thicker pie filling make sure to include xanthan gum if needed (optional).
Pie Crumb Topping Directions
1.Put the ingredients into an appropriate bowl, and blend them together gently. The topping should be in tiny clumps of powder and should be moist.
