For the next few months I have to prepare a picnic for my 4-year-old son every day before he can start the school canteen.
Sandwich with something sweet in the form of raisins and a homemade smoothie for vitamins. So I added a lunch box category to my blog where I will share recipes for the things I give her for lunch at school.
When my two older boys were the same age, I tried to hopefully heat food in a thermos, but they often returned, when they were untouched. Children of this age prefer to eat early so that they can play with their friends. So this time I won’t make the same mistake. For those wondering why I don’t add biscuits for dessert, it’s pretty simple. If I’m not careful, my sons eat the cookies but not the rest.
So I bring sweets as a snack after school to congratulate them when they finish their lunch.
I’ll start with this sandwich because I know my son loves it and it’s also a very popular topping in the Lucky Dips Breads that my customers order for kids’ birthdays. It’s a classic that can easily be customized to suit your taste.
Also perfect for afternoon tea.
Ingredients:
Recipe for 2 sandwiches, can be kept in the refrigerator for 2 days
- radish, finely chopped
- 3 hard-boiled eggs (chilled, peeled)
- 2 tbsp mayonnaise
- 1 tbsp yoghurt
- 1/2 tsp curry powder (optional, but my favourite)
- salt pepper
- 4 slices white bread
Preparation:
Smash the eggs with a fork, mix them with the mayonnaise, the yoghurt, the curry, the salt and the pepper. Spread the bread, top with thin slices of radish and sprinkle with chopped dill. Place the 2nd half of the bread on top.
For an Afternoon Tea, cut off the crust and divide the bread into 4 rectangles.
